1. Make the Dough:
– In a mixing bowl, combine flour, salt, and baking powder (if using).
– Add olive oil and mix well.
– Gradually add warm water, mixing until a soft dough forms.
– Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
– Cover and let it rest for at least 30 minutes.
2. Prepare the Filling (if using):
– In a bowl, mix cheese, mashed potatoes, and spices. Adjust seasoning to taste.
3. Shape the Flatbreads:
– Divide the rested dough into small balls (about the size of a golf ball).
– Roll each ball into a flat circle on a floured surface, about 1/4 inch thick.
4. Add Filling (if using):
– Place a spoonful of filling in the center of each rolled-out dough circle.
– Fold the edges over to seal, then flatten gently with your hand.
5. Cook the Flatbreads:
– Heat a skillet or griddle over medium-high heat.
– Place the flatbreads in the skillet without oil and cook for about 2-3 minutes on each side or until golden brown and cooked through.
