Pie Crust (homemade or store-bought)
1 ½ cups all-purpose flour
1 tsp sugar
½ tsp salt
½ cup unsalted butter, chilled and cut into cubes
4-5 tbsp ice water
Pecan Filling:
1 cup light corn syrup
1 cup brown sugar
3 large eggs
1/4 cup unsalted butter, melted
1 tsp vanilla extract
1 ½ cups pecans, coarsely chopped (or whole, depending on preference)
•INSTRUCTIONS:
1. Prepare the Crust:
In a bowl, combine flour, sugar, and salt. Cut in the butter until the mixture looks like coarse crumbs.
Gradually add ice water, one tablespoon at a time, until the dough comes together. Wrap and refrigerate for at least 1 hour.
Roll out the dough and place it in a pie dish, crimping the edges. Pre-bake at 350°F (175°C) for about 10 minutes.
2. Make the Filling:
In a medium bowl, whisk together the corn syrup, brown sugar, eggs, melted butter, and vanilla until smooth.
Stir in the pecans.
3. Assemble and Bake:
Pour the filling into the pre-baked pie crust.
Bake at 350°F (175°C) for 50-60 minutes, or until the center is set but still slightly jiggly.
Let cool completely before slicing.
