Sultana Loaf

 

Ingredients
1 cup sultanas (golden raisins)
1 cup boiling water
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon (optional)
1/4 teaspoon ground nutmeg (optional)
1/2 teaspoon vanilla extract
Instructions
Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
Prepare the Sultanas:

Place the sultanas in a bowl and pour the boiling water over them. Let them soak for about 10 minutes to plump up. Drain well and set aside.
Make the Batter:

In a large mixing bowl, cream together the butter and sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
Combine Dry Ingredients:

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Combine Wet and Dry Ingredients:

Gradually add the dry ingredients to the butter mixture, mixing until just combined.
Gently fold in the drained sultanas.
Bake the Loaf:

Pour the batter into the prepared loaf pan and smooth the top.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean. If the top starts browning too quickly, cover it loosely with foil.
Cool and Serve:

Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
