Ingredients:
– 1 pound part-skim mozzarella cheese, cubed
– 1/2 cup olive oil
– 1 tablespoon fresh parsley, finely minced
– 2 tablespoons roasted red pepper, finely chopped
– 1 tablespoon sun-dried tomatoes, chopped small
– 2 teaspoons fresh basil, chopped
– 1 teaspoon fresh chives, minced
– 1 teaspoon crushed red pepper flakes
– 1/4 teaspoon garlic powder
– 1/4 teaspoon kosher salt
Instructions:
1. In a medium bowl, whisk together the olive oil, roasted red pepper, and other herbs and spices until combined
2. Add the mozzarella cubes, gently folding them into the marinade until coated evenly
3. Cover the bowl and chill in the refrigerator for 1-2 hours, stirring occasionally to let the flavors infuse
4. Serve cold with toothpicks for easy snacking
