Walnut Maple Goat Cheese Roasted Sweet Potatoes 

 

Ingredients:

– 4 medium sweet potatoes, peeled and cubed
– 3 tablespoons olive oil
– 1/4 cup maple syrup
– 1 teaspoon cinnamon
– Salt and pepper to taste
– 1 cup walnuts, roughly chopped
– 4 ounces goat cheese, crumbled
– Fresh parsley, chopped (for garnish)

Instructions:

1. Preheat the Oven:

– Preheat your oven to 400°F (200°C).

2. Prepare the Sweet Potatoes:

– In a large bowl, combine the cubed sweet potatoes, olive oil, maple syrup, cinnamon, salt, and pepper.
– Toss until the sweet potatoes are evenly coated.

3. Roast the Sweet Potatoes:

– Spread the sweet potato mixture in a single layer on a baking sheet lined with parchment paper.
– Roast in the preheated oven for about 25-30 minutes, or until the sweet potatoes are tender and lightly caramelized, stirring halfway through.

4. Add Walnuts:

– In the last 10 minutes of roasting, sprinkle the chopped walnuts over the sweet potatoes and return to the oven to toast the walnuts.

5. Finish with Goat Cheese:

– Once the sweet potatoes and walnuts are done roasting, remove them from the oven.
– Sprinkle the crumbled goat cheese over the warm sweet potatoes and walnuts.

6. Garnish and Serve:

– Transfer to a serving dish and garnish with fresh chopped parsley before serving.
