• INGREDIENTS:
4 eggs
2 cups shredded cabbage
½ cup shredded cheese (cheddar or mozzarella)
Salt and pepper to taste
Chopped chives for garnish
Olive oil for frying
•INSTRUCTIONS:
1. Heat a bit of olive oil in a non-stick pan over medium heat.
2. Add the shredded cabbage to the pan, spreading it out evenly.
3. Crack the eggs on top of the cabbage, spreading them out evenly.
4. Season with salt and pepper.
5. Let the eggs cook until the whites are set but the yolks are still runny.
6. Sprinkle the shredded cheese evenly on top and cover the pan with a lid. Let it cook for another 5-10 minutes, or until the cheese is melted and slightly golden.
7. Remove from heat, cut into wedges, and garnish with chopped chives before serving.
