Ingredients
For the Madeleines:
1/2 cup unsalted butter, melted (plus more for greasing the pan)
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract
Zest of 1 lemon
2 tablespoons fresh lemon juice
For the Lemon Glaze (optional):
1 cup powdered sugar
2 tablespoons fresh lemon juice
Zest of 1 lemon (for garnish)
Instructions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease the madeleine pan with melted butter and dust with flour, shaking off the excess.
2. Mix Dry Ingredients:
In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
3. Whisk Eggs and Sugar:
In a large mixing bowl, whisk the eggs and granulated sugar together until pale and fluffy, about 5-7 minutes. You can use an electric mixer on medium speed for better results.
4. Add Flavorings:
Mix in the melted butter, vanilla extract, lemon zest, and lemon juice until well combined.
5. Combine Mixtures:
Gradually fold in the dry ingredient mixture using a rubber spatula or a wooden spoon until just combined. Be careful not to overmix.
6. Fill the Pan:
Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
7. Bake:
Bake for 10-12 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
8. Cool:
Remove the madeleines from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
9. Prepare the Glaze (optional):
In a small bowl, mix together the powdered sugar and lemon juice until smooth. If the glaze is too thick, add a little more lemon juice. Drizzle the glaze over the cooled madeleines and garnish with lemon zest.
10. Serve:
