1: Season and Brown Beef: Season the beef tips with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides. Remove from the skillet and set aside.

3: Add Liquids and Simmer: Pour in the beef broth and red wine (if using) to deglaze the pan, scraping up any browned bits. Add Worcestershire sauce and thyme. Return the beef to the skillet. Bring to a simmer, then reduce the heat to low, cover, and let it cook for 1 to 1.5 hours, or until the beef is tender.
4: Thicken the Gravy: In a small bowl, mix the flour and water until smooth. Gradually add this mixture to the skillet, stirring continuously until the sauce thickens to your desired consistency.
5: Serve: Sprinkle with fresh parsley if desired and serve hot over mashed potatoes, rice, or egg noodles.
